In medium saucepan, combine rice, 3/4 cup water, 1 Tbsp. olive oil, Special Seasonings, and 1 lb. uncooked boneless, skinless chicken breast, cut into 1-inch pieces; bring to a boil. 2. Cover, reduce heat to medium-low and simmer 24-26 min. or until most of water is absorbed. 3. Let stand 5 minutes. Stir before serving. Stir-In Idea: Add 1/3 cup thinly sliced green onion before stand time. Microwave: In 2-quart microwavable bowl, combine rice, special seasonings, 2-3/4 cups water and 1 tablespoon olive oil. Microwave uncovered at high 24-29 minutes or until most of the liquid is absorbed. Cover; remove from heat. Let stand 5 minutes before serving. Microwave ovens vary; adjust times as needed.
