Annatto is extracted from the seeds of the achiote tree (Bixa orellana). Annatto is well known for its commercial uses as a natural colorant for cheese and butter, etc, but the ground seeds have always been used for coloring and flavoring in traditional cooking. Achiote paste, also known as recado colorado, is a popular Yucatan ingredient, but is also used throughout the Spanish speaking Caribbean islands, and throughout Latin America, particularly in Mayan and Aztec cuisine. Most popularly used to make cochinita pibil, a spicy pork dish in Mexico. It is also widely used to add color to sofrito and blaff in the Caribbean. Thanks to the Spanish and Portuguese traders of the 16th century, you also find it being used in Vietnam and the Phillipines.Use a little to achieve a yellow or orange/red color in recipes, use more to add earthy, peppery flavor. Use a generous amount to marinate chicken, beef, pork or fish. Simply dilute paste in vinegar or olive oil. Add salt and other spices.
