What You Will Need: fresh kale; cherry tomatoes. 1 tbsp olive oil. 2 tbsp water. 2 cups kale, remove rib, chop and massage. 1 cup cherry tomatoes, sliced in half. 1. In a large stock pot, boil 8 cups of water. Add the freekeh and vegetable blend, bring to a boil and simmer for 18-20 minutes. 2. In a colander, drain and rinse well under cold water. Allow to drain for an additional 5 minutes. 3. While freekeh is draining, in a large bowl whisk together water, oil and dressing mix. Add freekeh, chopped and massaged kale and tomatoes. Stir to coat with dressing. 4. Allow salad to rest for 1 hour in the fridge to let flavors meld. Tip: Freekeh & Kale Salad pairs especially well with grilled meat or seafood. Contains wheat.
