Lot of trouble. But better than what we used to have.
This is a great, portable smoker. With the two racks, I can fit 4 slabs of ribs at a time. It even works well as a conventional bbq grill. It's easy to transport so I take it camping with me. My only criticism is that it doesn't work well in extremely windy winter weather. Under normal conditions, it holds a steady temperature and doesn't require much checking or adjusting. You can walk away and come back 5 hours later. This was the first smoker that I ever owned. After watching a couple YouTube videos, it was easy to use.
This is not a smoker. A smoker needs to be sealed up so that meet can be cooked 'low and slow'. This is done by controlling the amount of air that gets to the charcoal. There is no way to control the air! There is a 3/4 " gap all around the charcoal pan at the bottom. On top of that, there were welded nut missing that I had to dig up hardware to replace. I would have returned this in a heartbeat if was worth my time.
Price, solid legs, top adjustable vent. Just bought this and cooked the Thanksgiving turkey in it. Worked like a charm. Hard to beat the price and the construction is even a bit more solid than previous models. The additional adjustable vent is a nice touch.
Bought this smoker for Thanksgiving because I need parts for my bigger one.......worked just as good as my more expensive bigger one. I smoked a 14lb Turkey and it turned out perfect. Anyone having problems with it,,,,,,,,,cure the smoker first, and practice regulating the heat. Soak your wood chips for about 40 minutes and you'll have the best smoke meat ever.
