Very sharp. Good weight in handle. Handsome design.
This Knife is an excellent example of the fine cutlery produced by Wusthof. It has an amazing edge with the ability to easily slice through whatever you put in front of it. Without a bolster, it is easier to hold and use in my opinion. I would definitely look into this knife if you are looking to purchase a knife for both home and for work.
I've been using one of these knives almost every day for 9 months. This steel and heat treat hold an edge for a long time. I strop once a week. I only have to sharpen once a month. This knife is still razor sharp. I do have some feedback. It would be nice if the spine was rounded a bit. The squared off spine can be a little ruff at times.
My husband is a home cook, not a chef, but I wanted to gift him with something he would use often. He is thrilled with his knife. He says just the weight of the knife will chop through peppers and onions. Thank you for making wonderful products!
I've been using Wusthof Classic series knives for over 20 years and recently added the Classic Ikon series to my collection, and I love them, they have the perfect weight, handle and knife performance.
This is the knife I reach for most often. Daily use. Love the handle and weight. Glides easily through everything.
Love this knife along with all of our other Ikon Classics! The edge is extremely sharp and makes cutting effortless. The quality of craftsmanship is fantastic and it feels so good in the hand. We use our Ikon Classics every day and they're a joy to use.
Fantastic knives, perfect heft and balance, and easy to sharpen if you maintain them. Remember never put them in the dishwasher
Weight and balance great. I tried the gourmet collection knife which was sharp and did a good job but the icon collection is so much better and worth the price.
The Santoku combines Western and Eastern influences. This blade is very well made and if you like type it will do fine. The Kai is both aesthetically and ergonomically superior in my view, but the cobalt steel had serious corrosion issues. 1) The action is somewhat limited. I think the classic Asian slicer (cleaver) is more comfortable and has a cleaner appearance. 2) The Wusthof has a Granaton (sculptured) blade for food release. Unlike many, Wusthof has properly positioned this right at the edge. Howver, in my test, it did not make any noticeable difference. 3) If used as a chopper, the action is not as nice as a 9 inch and up (10 inch for French style) Western blade. 4) To repeat mystelf, having used other Asian style knifes, the handle feel and appearance are not a good. It certainly is a good knife, but would not be my first choice
