This product is amazing!! It makes delicious seitan with its texture resembling much like meat. With 70-80% of protein in this product, I can be rest assured that I have enough protein in each of my meal. It makes delicious meatballs when paired with chickpea flour. I highly recommend this product to all vegans and vegetarians! You'll love it, guaranteed!
When baking dark NO knead bread, it is most helpful to use vital wheat gluten. This is suggested by Hertzberg and Francois in their National Bestselling book, THE NEW HEALTHY BREAD IN FIVE MINUTES A DAY. Bob's Red Mill vital wheat gluten is the best!
Bob's Red Mill Vital Wheat Gluten has been a mainstay for our vegetarian lifestyle! The seitan recipe (which I add a different twist to in every batch) makes perfect luncheon “meat!” I simmer it, drain and freeze in individual bags. The freezing for some reason makes a firmer product. Slices like roast beef!
With just a few ingredients , you have a very high quality plant based protein ! Use the basic recipe on the bag and experiment ... I added some chopped dried onion and a little Italian seasoning to pump it up. Afterwards heat up a little olive oil and brown your Seitan! Yum!
Vital gluten is a great addition to our high altitude wheat and rye bread recipes to help control the density of the loaves. We use 2-4 TBS in every loaf.
Have been using unbleached all purpose flour and was not too happy with results in the bread maker. Since adding the gluten flour (sub one tablespoon for flour per cup) the results have been wonderful. Nicely risen light rye bread, fluffy inside. Yum!
This is good stuff. While I am not done experimenting with it, so far it works to give my 300 g French baguettes a better (more open) crumb than without it. Current testing bakers % is 2. 1% was not enough.
Using Bob's Gluten for years. Makes Great Whole Wheat Bread. I eat a lot of whole wheat bread. Whole grains are supposed to be better for those like me that have heart problems. I had a doubly bypass 18 years ago. Doing fine since. Have bake almost 500 loaves of bread in my Zojirushi. Maybe a bit less than half were whole wheat. Bob's has great products and service. I keep looking for Bob's gluten in the local markets but end up mail ordering it.

Delivered in a rain storm and "left outside a gate in a puddle of water" per the rescuer! Thankfully the flour was encased in a heavy plastic bag and I anticipate no adverse consequences.
