Good beans. They always cook down great.
I bought two packages and I've used one. I just put the other pound in a container and the beans to soak overnight. I'm making “BROTHY TOMATO BEAN SOUP.” You soak the beans overnight and the next day add a can of San Marzano Tomatoes that you've obliterated with your hand blender. Add rough chopped onion, sprigs of Thyme, salt and pepper, a couple of garlic cloves that you've smashed into submission. This part I cannot stress strongly enough: lock your doors and stay away from the windows. At this point add a couple of boxes of chicken stock and pretty soon the aroma wafting through the house is going to draw the neighbors like ducks to Junebugs. You forgot to lock the doors, didn't you? That's okay, that's why you made a DOUBLE batch of soup. When I bought these beans I had a choice of 2-3 brands of Great Northern beans but I chose this one. I'd looked them over because they're in a clear plastic package and they looked pretty good. Come to find out, when I washed both pounds of beans there were no bad ones, no rocks which I seriously always find in Butter Beans (why?) nothing but gorgeous, lovely, perfect Great Northern Beans. And the soup? Despite having very few ingredients it's amazingly hearty and delicious. Google the recipe. You won't be sorry!
