Great simply grilled or even airfried. They have a nice flavor and are good cut into small bites for toothpicks.
This is my go to sausage for all my gumbo, jambalaya and crawfish boils. I like andouille sausage just fine but you can't always find it like you can find this Chappell Hill jalapeño sausage around here so I have been stuck on this sausage for the past 25 years for my Cajun cooking. This sausage holds together real well after a cook or a boil without falling apart, or without being too hard.
