Dear egg buyer - The Egg Quality Lab: We want to welcome you to Friday Quality Testing at The Country Hen. The laboratory is a multi-purpose space, as it also serves as our farm conference room and George's office. Processing team member and quality assurance tester, Anthony Dickson, performs a battery of tests on 12 random eggs from every TCH barn/flock every week. The results are compared against the same barn from previous weeks, other TCH barns, industry standards and, most importantly, Country Hen standards to make sure every egg is meeting or exceeding expectations. All Eggs - Bring your No. 2 Pencils: The 12 eggs from each barn are individually weighed and their shell color is scored against a brown egg shell color chart. Each egg is broken and tested for: albumen height, yolk color, white quality and grade, blood spots, and egg shell thickness. The albumen height is the measurement of the thick egg white. The albumen height and egg weight are then used to calculate the Haugh unit of the egg. The Haugh unit is one important industry standard used to gauge overall egg quality. The process is repeated for every barn. The Results and Other Testing: The results are monitored in great detail. If the egg quality varies, we are able to detect and react quickly to make any changes as needed. Anthony also performs other important quality tests. Recently, we just completed a six week break-out test for our flocks. We pulled 72 eggs from 9 of our flocks at various ages. We tested 12 eggs every week for six consecutive weeks. This time frame represents the sell by date of the eggs. We tested the eggs every week in order to ensure that our customers receive eggs that meet or exceed TCH standards through the sell by date. Anthony also conducts numerous tests on our competitor's eggs to evaluate their quality performance.
