Its my favorite pancakes
I don't recall where or when I received my first box of "Maple Grove Farms Gluten Free (G.F) Pancake & Waffle mix, as 2 of my 5 children have Celiac the same as I do, so it could have been a gift? Anyway, on the back of the box was a recipe to make upside down pineapple cake, which is one of my grandsons favorites. So, the next time they came to visit, I went ahead & made him one and he absolutely loved it. This continued every time they came here or we went to visit them, as they live a good ways away from us. He loved it so much that on, I believe it was his 3rd or 4th birthday, when his Mom asked him what kind of cake he wanted, he said "Grandma's Pineapple cake". That year he was having a birthday party at a pizza place, with a lot of family & friends, therefore I had to make 4 cakes. My husband Stephen made a large board to place them all on & we laid bunches of grapes around them for decoration. Our two daughters & I didn't touch the cake until after lots of people had already had some, as we didn't want them to know it was G.F. as usually when you mention that, most people wont even try it, so they were shocked to hear it was G.F. Now Liam is now 8 yrs. old, & I have been making his birthday cake each year as well as at Christmas & Thanksgiving day too. His last birthday he had, was with just his friends & so he wanted, I believe a Batman cake. Then last week for the first time ever, my husband whom does all the shopping, purchased some frozen pancakes for himself, which smelt so good & so I mixed up a batch to make pancakes for myself. I followed the recipe on the box & I thought they were awful, My husband whom doesn't need to eat G.F. tried them & he thought the same. Therefore they all went into the trash. So personally, although we don't like the pancakes, we will continue to purchase the mix, for the AWESOME PINEAPPLE UPSIDE DOWN CAKE".
My husband found this for me when he was traveling around through Tennessee. He'd gone to visit some retired friends who are not in such good health. One of the ladies said she had bought this and loved it. I was still eating gluten-free (for 8 months) until an actual biopsy came back negative. Yes, I switched docs!!! This is a real good substitute for the pancake mix people are used too. Its a little different and you will find the consistency will not be as light or fluffy but it mixes well.The actual pancake reminded me of the 'lumberjack' pancakes churches used to make for pancake breakfast. The lumberjack pancake was created to keep men (and ladies!) tummies full while they did very hard work in cold weather. Follow all instructions but you may use fresh fruit as a garnish. I added thawed blueberries and it just didn't work they sort of 'stuck' on the top. I'm not real creative (when it comes to cooking and gluten free can be a challenge of sorts) It costs more than commercial brands but it doesnt skimp on quality or taste. NO gluey aftertaste!

Walmart charged me $29. including delivery for an item that cost $8.00 in the store. I've returned the item.
