tastes slightly sweet. Is great for cakes, muffins, cookies pie crust, and sauces! I used it for my Biscotti Company Cookies, and in my cookbook, No Wheat No Dairy No Problem. Its light and high in fiber and protein! The carbs absorb slower due to high fiber! I use it one to one in recipes. .
We use Bob's Red Mill Oat Flour in the cobblers we make at our bakery. People absolutely love them! We tell them they are Gluten Free if you are, and if you are not you will never know! We literally cannot keep them in stock! Only the best for our customers!
This is the BEST flour for my gluten free baking. Since covid I haven't been able to find it in the store that I shop. Have tried various other gluten free flours and flour combinations due to unavailability of this product. Nothing compares in texture, flavor, and density. Just ordered a case on line. Back to yummy gluten free baking for me!!??
Oat flour is a gluten-free flour without the bitter aromas or tastes found in ancient grains, such as amaranth, quinoa, millet, or even buckwheat. It's even milder than sorghum flour, which makes it more desirable in breads where the flour cannot be masked by sugar or spices. It's also lighter in texture than the ancient grains, which tend to form a more adherent cementitious batter. Then the question remains whether the gluten-free recipe demands oat flour or rice flour, as both are lighter flours. The two main differences: rice flour has little taste, and oat flour has more fiber/bulk.
I have used the gluten free oat flour for the past 5 years and it has been consistently excellent quality. I had been buying the 22oz cellophane packages and have learned this month (December 2020) that the cellophane packages have been discontinued and replaced by an 18oz "free-standing" plastic pouch. Additionally, our preferred online vendor (the flour is not available in local stores) has raised the price by 33% with this new packaging. That has left me with the difficult decision to buy the oat flour in bulk and pay the shipping from the west coast to the east coast. Bottom line.. excellent, trusted product but IMO a poor decision by BRM to change the packaging to a smaller, more expensive, more environmentally damaging container.
