These are my 2nd and 3rd Miyabi knives. They are amazingly sharp and feel well balanced in my hand. I've had many brands and this is by far my favorite. Just make sure to dry them as soon as you wash them [This review was collected as part of a promotion.]
The 2 most essential knives for any kitchen.The Evolution line has an asian inspired western handle, comfortable for both the right and left handed. The Steel used in the blase is forgiving like a german knife, resistant to knicks and chips on the cutting edge. Easily sharpened back to sharp edge, it still has the feel and angle of an Asian knife.
